PlantPure Nation, Cookbook Giveaway and Tempeh Jambalaya!!


Since, the debut of the award-winning documentary Forks Over Knives the plant-based movement has escalated across the nation. One screening after another, it was getting people to rethink what they were eating and how they thought about the chronic diseases rampaging our health. The excitement and energy of people had after seeing this movie was life-changing, making the film a catalyst for a plant-based revolution. Last Fall, when I heard the producer and writer of Forks Over Knives, was working with a creative team to make a follow up documentary called PlantPure Nation I was thrilled! It’s just what we need to keep the momentum going, and raise awareness about how a plant-based diet can impact not just our health, but our communities and society at large.

Kim Campbell, Author

Kim Campbell is the daughter-in-law of Dr. T. Colin Campbell, considered by many as the “science father” of the rapidly growing plant-based nutrition movement. She’s also the wife of PlantPure Nation Executive Producer and Director Nelson Campbell. Kim holds a bachelor’s degree from Cornell University in Human Service Studies, with a minor in Nutrition and Child Development.

In PlantPure Nation Cookbook, she shares more than 150 extensively tested, whole food, plant-based recipes that she has created and cultivated over 25 years of vegan cooking. All of the recipes sound incredibly scrumptious and the pictures are beautiful! The recipes look so good that when I was first skimming through the book I was a little bummed that I had to ship it off to someone.

If you like the flavor and global influence of my recipes than I think you’ll love this cookbook. The recipes are very similar in that way. I also want to let you know the recipes do differ from mine in that some of them include ingredients such as maple syrup, tamari and gluten-containing grains, so this is not an SOS-free or gluten-free cookbook. However, most of these ingredients can be substituted fairly easily or just left out.

Regardless, the recipes totally get my tastebuds dancing so I’ve already ordered a copy of the book for myself. Here’s a list of some of the recipes I look forward to trying:

To give you a sample of how tasty the recipes in this cookbook are, I want to share one full recipe from the book. I chose the Jambalaya because I don’t have any other recipe on my site with flavor like this AND I just love tempeh!!!

Katie Mae's Jambalaya from PlantPure Nation Cookbook

Jambalaya, pronounced or , is a traditional dish of Louisiana with Spanish and French influence. This plant-based version is most similar to the Creole Jambalaya, which is also called Red Jamabalaya because it uses tomatoes or tomatoes sauce. The traditional dish has three parts to it: vegetables, meat and rice. Of course, Kim Campbell, the author of PlantPure Nation is going to change that up a bit.

Instead of sausage, shrimp or any other animal flesh, Kim calls for tempeh in this nutrient-dense, PlantPure version, which I love!! Tempeh = Ohh, So Delicious!! Plus, with lots of spices and liquid smoke, the flavor is deep and will leave you wanting more. I did make two small changes to the recipe. First, I left out the salt because it’s not necessary and I simply don’t cook with salt. The second adjustment was decreasing the liquid smoke to just 1/2 teaspoon. This was plenty of flavor for me, since I don’t use liquid smoke often. However, for people who enjoy it more often, you can definitely increase the amount. The cookbook calls for 1 tablespoon.


Tempeh Jambalaya Recipe

by Kim Campbell


¼ cup diced onion
¼ cup sliced celery
¼ cup diced roasted green bell pepper
¼ cup diced roasted yellow bell pepper
¼ cup diced roasted red bell pepper
½ cup sliced frozen okra
1 cup low-sodium vegetable stock, divided
3 tablespoons tomato paste
3 garlic cloves, minced
½ cup chopped fire-roasted tomatoes
3 tablespoons chopped fresh parsley
1 teaspoon dried thyme
½-1 teaspoon liquid smoke
1 teaspoon smoked paprika
4 ounces tempeh, cubed and sautéed
1 teaspoon sea salt
1 teaspoon black pepper
4 cups cooked long-grain brown rice, for serving


In a large saucepan over medium-high heat, sauté the onion, celery, bell peppers, and okra in a ½ cup of the vegetable stock until the onion is translucent.

Add the tomato paste, garlic, and fire-roasted tomatoes. Heat through, stirring.

Add the parsley, thyme, and remaining ½ cup of the vegetable stock and bring to a simmer.

Add the liquid smoke, paprika, and tempeh. Season with salt and pepper to taste. Cover and cook over low heat for 1 hour.

Serve over steamed brown rice.

Makes 4 servings
Ready in 90 minutes*

Chef’s Notes

Kim says she likes to use a slow cooker for this recipe since it requires an hour of low heat to bring out the full flavors.

If you don’t have time to let the recipe simmer for an hour, the cooking time can be minimized. You can cook the dish for as little as 10 minutes, or until the veggies are tender and the tempeh is fully warmed. The flavors won’t have time to mingle and deepen, but it will be very tasty either way.

This recipe calls for the Jambalaya to be served over the rice, but feel free to mix cooked rice directly into the vegetables and tempeh, like traditional recipes often call for.

    Ive been eating plant based for about 3 years now and my favorite part of it all is the variety! I used to eat the same things over and over, but introducing new foods has been wonderful. My meals are more fun to put together and way more flavorful! I love making something new so often!

      Hi. I have been eating a purely plant based diet since may of 2013. The being it’s are many but primarily doing so has increased my energy 100 fold, cut my pain level an equal amount, improved my hearing oh and I have lost over 160 pounds. Upon contemplating this further the biggest benefit isn’t all the above or even the fact my asthma is gone and I no longer require o2 at night, it is that I am a different person. I laugh more , move better, and do things I only dreamed about doing for most of my adult life. More sentences than requested but this way of living has given me my life.

    The greatest benefit for me of eating a plant based diet, has been that I experience less over all pain and inflammation in my body, therefore, I have ben able to get off the daily dose of Prednisone (steroid) that had been prescribed for me for several years.

    I am still teetering on plant based vs. regular meat based diet (now mainly plant). I notice a BIG difference on the way I feel when waking up after eating plant based. I feel alive and good inside. I wish I knew more about the plant based items that are out there and how they are used in eating and cooking. There are fruit and veggies from all different countries sold at stores like “Whole Foods” and I feel like I should know what these are, how to prepare, and even how they taste. Someone should teach a class on what to do with this huge variety of healthy foods that are passed up every day.

    The most exciting thing about WFPBSOS FREE eating is that I never get hungry!!!!!!!!!!! The food keeps you full and quite satisfied! I have to remind myself to eat!!!!!!!! And that’s amazing!     The thing I notice the most after going plant based (2 years ago) is the energy I have. I’m 54 and have never had so much energy in my life! Also I’m always trying to see the positive side of things and dealing with stressful situations is so different now and I have a lot more patience then I used to have. I also love discovering new veggies. I just recently (like two days ago) decided I was going to incorporate sweet potatoes (I was never a fan) and boy all of a sudden I’m loving them!!!

    We’ve been plant based for about 3 years now – after slowly heading in that direction for the past 10 years. We started out with 1 meat free day a week, then 2, then 4, and finally I said, “Enough of this! We don’t need meat at all!” My father died of heart disease at the age of 47! WAAAYY too early! When I was in my 40’s, I began researching the link between meat and dairy and heart disease. I has been a fantastic decision and broadened my choice of foods, rather than narrowing it!

    I’ve been following a plant based diet for 7 years this April. I try to encourage as many people as I can to jump on our wagon, but I’m not pushy because then it will turn them away completely. I’ve lost over 100 lbs. I look 10 years younger and I feel like I’m 30 years old. When people see me that haven’t for a long time they don’t recognize me! What a feeling.     For different health reasons and a suggestion of a health care provider, I started a plant-base diet on January 2014. I had given up red meats since 1981 and I eat to live, not live to eat, so my transition to an all-plant based diet was very easy and I don’t miss what I don’t need or might harm me. Little or no craving of my ex-favorite foods.
    Within 3 months, my cholesterol went down from 216 to 165, and I am off blood pressure medications, all in one fell swoop. I am 67, my height is 5’9 and my weight went down from 160 to 145, and continues to go down, hopefully not too much more. I do have to watch my energy level and be mindful of eating the right nutrition for me, but all is fine. I am waiting for another marker in my health to improve some more to call it…defeated.

    Hi – my transition to plant based eating was a happy “accident” … it began as a 90 day experiment (after a medical fast undertaken to improve my sleep) … when not only my sleep improved dramatically, but all my fibromyalgia symptoms completely disappeared (after 15 years of serious disability), I realized plant based eating was my new way of life … there was simply no decision to make … I was living again!

I have struggled with stomach issues, that I am still trying to get under control, for years! I tried Paleo, I got sicker, and I have tried going to go some plant based, and hoping to do a 21 day reboot soon. I have been reading, watching shows and trying recipes.     With my plant-based diet since many years ago, my skin is radiant. I feel light but certainly strong. I have never gone to the hospital! Moreover and more importantly, I believe that I am contributing to the sustainability of the earth because my plant-based diet does not consume too much of the elements of life which other people need such as water and fuel and I don’t pollute the environment! I love all life-forms including animals and so I eat consciously with my plant-based diet!

    I hope to see more and more people transitioning to the plant-based diet in order to make this world a better place to live and for the Mother Earth to recover from devastation of meat-based food consumption!

    I began on June 8, 2013 after watching Fat, Sick, and Nearly Dead. This film was the catalyst to health for me. Forks Over Knives was recommended to me by a co-worker and I’ve watched it over and over and recommended it to everyone I know. The biggest benefit to me from a WFPB lifestyle is that I no longer go to bed despising myself and my food choices of the day, bargaining with myself and God about the next day. I began my journey at 243 lbs, wearing size 22 pants and am now 151 lbs wearing size 10 pants. I’ve been able to reverse high blood pressure and heart disease, and I no longer suffer from hip and elbow joint pain. I had tried so many “diets” and lost weight on them all, but they were not sustainable and I gained all the weight back plus more. Knowledge is power and I continue to educate myself about food and our environment. Knowing that my choices do not cause an animal to suffer is another bonus! Thank you

    Ive been vegan for 4 years and my biometrics are always perfect! The last 2 months, Ive also avoided flour and refined sugar, and lost 11 lbs. I feel im doing everything I can for my best health and wellness. Even if I did get sick (which I don’t), I believe my body would quickly recover because of the nutrition it receives regularly.     Focusing more on a Plant Based Diet has changed the way I think and feel about eating, you actually THINK about it, for myself and my family. My biggest surprise when starting was the dramatic down sizing in dress size, made me clean out my wardrobe, fit into the garments I have previously felt depressed trying on, it was so inspiring. I had discomfort for a long time down my right side, my Naturopath and I tried a few different things but in the end it really just came down to FOOD and what I needed more of and what I needed to cut out. Its been a real journey of education and an on going one. I just love my introduction to a new and better way, but is actually an old way, of living a wholesome healthy life. Go in with an open mind and hang in there! 😉

    My husband and I have been eating a plant based diet for 8 months now and we absolutely love the variety, tastes, textures and nutrition we get through plant based foods. So many of our friends don’t understand, make fun of us and say we will be getting bored with our limited choices and we just keep quite. We are very happy with our choice and hope that one day more and more people will feel the same way. We learned early on when we switched to a wheat free diet 3 years ago that giving information to most people makes them think we are pushing our beliefs onto them. So, we lead by example. My arthritis is under control with no medication, my blood pressure has returned to normal in the short time we have been eating plant based and we are so healthy. To me the benefits speak for themselves!

    I have been eating 99.9% plant based for the past 4 months (I had one lapse) and I’ve noticed many physical improvements. I was having terrible leg pain (the pain was most intense at night, and I was unable to sleep) and in less than 2 months the pain was completely gone. The only change I had made was to my diet. My cravings (for processed foods) have decreased dramatically and I have an overall improved sense of well being. I am very grateful to FOK and every whole food plant based pioneer!

      The greatest benefit I’ve received is that I’m 86 years old and have been a vegetarian for the past 46 years & during the past 10 or so years, have been at least 50% raw. I’m healthy and energetic and people have a hard time believing that I’m that old.

    May 1 of 2013 I had a heart attack and had a stent put in. I was 53 year old that was overweight and 289 total cholesterol! After the stent, Doctor sent me home and said: take these pills, walk and cut down on meat. Having heart disease in my family, I knew I was in for some life changes. Started doing my own “proactive health care”, read the China Study, and was then introduced to Forks over Knives movie. I decided to start taking care of “ME”! The Cholesterol pills and Blood Pressure pills were making me sick, so I went 100% Plant Based, and never turned back! Today- I am 45lbs lighter, I run and go to the gym 3 times a week, AND my cholesterol is 114!!! No pills folks just diet. Thank God that movie was on the internet!
